Vegan Jackfruit Sloppy Joes with Avocado Kale-Slaw

I gave this to my dad and boyfriend to try (since they are both hard set on eating meat and tend not to like vegan alternatives on principle) and they both loved it! So that's a sign of just how good this recipe is.


  • 20 oz can of green jackfruit in brine

  • 1 tbsp olive oil

  • 1 cup of your favorite BBQ sauce

  • 1 avocado

  • 1 bunch of kale

  • 1/2 lemon

  • 1 carrot

  • 1 tsp pepper

  • 1 tsp salt

  • Ciabatta rolls

  • 1 white onion


  1. Open your can of jackfruit and break apart (shred) into smaller pieces. Saute on medium-high for 5 mins. Add bbq sauce and then cook on low heat for 20-25 mins.

  2. Chop your onion and cook on medium-high until nice and caramelized (20-ish mins).

  3. Cut and scoop out your avocado into a medium sized bowl. Squeeze lemon, and then sprinkle salt and pepper. Chop kale and add into your bowl. Finally, spiral-ize the carrot and add. Mix everything together!

  4. Spread the kale-slaw onto your ciabatta. Add jack fruit and caramelized onions. Finally, add as much BBQ sauce as you want :)

  5. Enjoy!
