The cottage cheese flatbread went viral on social media, and as a cottage cheese lover, I couldn't resist. But I was SO SURPRISED that it held up as well as it did! Only thing is to make sure you use a full fat cottage cheese, because when I tried with nonfat it fell apart.
The ingredients in this recipe that are beneficial for your ovulatory phase are salmon, sesame. During the ovulatory phase, estrogen and testosterone surge, so you want to eat foods that help your body balance out the spike in estrogen and support the heart.

Salmon is great for the ovulatory phase because it is high in omega-3s, which our body cannot produce on our own so it’s important to add it into our diets. Omega-3 will boost your mood, bust stress, is anti-inflamatory, and aids in progesterone production. It is also high in vitamin D which can increase FSH sensitivity and increase progesterone production, which is important if you’re trying to conceive!
Lastly, sesame seeds are high in vitamin E. Vitamin E is a natural antioxidant, and also has been shown to increase the luteal blood flow which lengthens the time of your luteal phase. They are also high in zinc which is crucial for progesterone production and they contain lignans which help block excess estrogen as progesterone rises.
Cottage Cheese Flatbread - Smoked Salmon Wrap
Serves: 1 Active Time: 5 minutes Total Time: 5 min
Ingredients
1 cup cottage cheese
1 egg
1 tsp garlic powder
1/4 avocado
Squeeze of lemon
handful of arugula
3.5 oz smoked salmon
Parsley
Microgreens/sprouts
Everything but the Bagel Seasoning
Balsamic glaze
Process
Preheat oven to 350ºF
Scoop cottage cheese, crack an egg, and add 1 tsp garlic powder into a food processor. Blend together, then pour over a lined and oiled baking sheet. Use a spoon or spatula to spread it out into a 1/4 inch thick rectangle, that will serve as your wrap.
Bake for 25-30 minutes, or until the wrap has solidified into a wrap-like texture.
Top with avocado, lemon, arugula, lox/smoked salmon, parlsey, microgreens, seasoning, and balsamic glaze.
Either roll up, or fold, and enjoy!
