Shrimp Fried Rice

This pineapple shrimp fried rice is much cuter when served in a pineapple, but delicious in a bowl as well! This recipe is so tasty, healthy, and easy - that you might just find that this becomes one of your new favorite dinners.


The ingredients in this recipe that are beneficial for your ovulatory phase are shrimp and pineapple. During the ovulatory phase, estrogen and testosterone surge, so you want to eat foods that help your body balance out the spike in estrogen and support the heart.

Shrimp is high in protein, selenium, and B12. The protein and B12 are important to maintain your higher energy levels in this phase, and selenium can boost progesterone production which will be important during the luteal phase.


Pineapple is rich in antioxidants, and an inflamed body won't be able to produce and maintain healthy hormone levels - so this is especially important as estrogen is at its peak during ovulation. It also contains an enzyme that aids digestion, bromelain, which helps protect your gut and helps you absorb vitamins and minerals.


 

Shrimp Fried Rice

Serves: 10 Active Time: 30 minutes Total Time: 40 min

 

Ingredients

  • â…“ cup brown rice

  • ½ Tbsp butter

  • 4 cloves garlic, minced or chopped

  • 0.5 lb shrimp

  • 1 tsp chili powder

  • ½ cup onion, diced

  • ½ cup pineapple, chopped

  • 2 eggs

  • 1 Tbsp low sodium soy sauce

  • 1 tsp sesame oil

  • 1 tsp sriracha

  • Green onion


Process

  1. Start by preparing the rice according to the instructions. If you’re making brown rice, this takes around 40 min so make sure to time the rest of this properly.

  2. In a pan over medium-high heat add the butter, 2 cloves of minced garlic, and shrimp. Cook for 4 min, stirring often. Add chili powder and mix in, letting it cook for another 30 seconds.

  3. Remove the shrimp from the pan, then add another 1/4 tbsp of butter, 2 more cloves of garlic, and the white onion. Cook for 4-5 minutes over medium-high heat, until the white onion is translucent.

  4. Add the cooked rice and pineapple to the pan

  5. Crack the 2 eggs in, and mix them into the rice. Add the soy sauce, sesame oil, and sriracha, and mix together. Cook for another 2-3 minutes.

  6. Serve with green onion
