Shakshuka

Shake up your breakfast with some shakshuka! We also love the truffle cheese! It pairs very nicely with the eggplant :)



Ingredients

  • 1 white onion

  • 1 eggplant

  • 2 roma tomatoes

  • 1 tbsp paprika

  • 1/2 tbsp chili flakes

  • 1 tsp cumin

  • 1 egg per person (or more, I am not your mother)

  • Truffle cheese

  • A handful of parsley

  • 1 tbsp lemon

Process

  1. Heat up a large pan

  2. Chop and saute onions

  3. Chop and mix in the eggplant

  4. Let cook down for 10 mins - or until the eggplant is soft

  5. Chop and mix in tomatoes

  6. Let simmer down for 5 - 10 mins

  7. Add paprika, cumin, and chili flakes

  8. Make divots for the eggs in the veggie mixture

  9. Crack eggs into divots

  10. Top with cheese and parsley

  11. Serve with toast :)
