Pistachio Brown Butter Ravioli with Crispy Sage

This is a smooth and decadent dish which is very easy to make. No one would have ever guessed your pasta came from a package haha. There is something about brown butter that really makes pasta pop. And when combined with the pistachio and sage, it takes it from good to great.

Serves: 3

Prep time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Ingredients

  • 1 package Ricotta and Lemon Zest Ravioli (or whatever ravioli you have)

  • ¼ cup ground pistachio

  • 1 stick butter

  • 3 sage leaves

  • 1 Tbsp grated parmesan

Process

  1. Cook the ravioli according to the instructions on the package. You are more than welcome to swap out any ravioli in this recipe.

  2. Add the butter to a pan on medium-low heat.

  3. Once melted, add the pistachios and chopped sage to your pan. Stir the mixture constantly so as to not burn the butter. Cook for about 5 minutes or until the butter begins to foam slightly. The butter should start to form brown specks and smell nutty. The sage should begin to turn from green to brown - we want them to be crispy so this is good. Turn off the heat.

  4. Toss your cooked ravioli in the brown butter sauce, top with grated parmesan cheese, and serve! You can drizzle a bit more of the brown butter sauce over the ravioli at this point if you would like.
