Pineapple Fried Rice

Fact: Everything tastes better when served in a pineapple 🍍

This makes enough to serve 4-6!


  • 2 cups white rice

  • 1 white onion

  • 1 tsp garlic

  • 1 tsp ginger

  • 1 red bell pepper

  • 1 Trader Joe's Chicken sausage (or chinese sausage if you have it)

  • 2 cups stir fry veggie mix

  • 1/4 cup Fresh pineapple

  • 3 eggs

  • 2 tbsp rice vinegar

  • 1 tbsp Trader Joe's sesame oil (or more it's very yummy)

  • 2 tbsp soy sauce

  • 1/8 cup Trader Joe's coconut cream


  1. Pro-tip, use day old rice because it will have had more time to dry out!

  2. Chop and saute onion on medium heat for 5 minutes in a large pan, then add garlic and ginger.

  3. Chop your bell pepper + sausage and add to pan. Cook for another 10 minutes.

  4. Defrost your veggie mix and add to pan. Cook until veggies are tender.

  5. Add fresh pineapple and cook for 5 minutes.

  6. Add rice

  7. Make room for the eggs to cook and then add into your pan.

  8. Once the eggs are cooked, add vinegar, sesame oil, soy sauce, and coconut cream.

  9. Serve in a pineapple if you're feeling fancy!

  10. Enjoy!
