Pesto Mahi Mahi with Zucchini Rice and Green Beans

Mahi (oh) Mahi was this dish gooood 🤪 The zucchini rice is a fun and yummy way to get your veggies in for the day!

This makes enough to serve 4!


  • 4 mahi mahi filets

  • Trader Joe's pesto

  • Several sun dried tomatoes

  • 1 tbsp olive oil

  • 1 handful of fresh pineapple

  • 2 zucchinis

  • 1 cup white rice

  • 1 pan-ful of green beans

  • 1/2 lemon

  • 1 tsp garlic

  • 1 tsp pepper


  1. Preheat oven to 400!

  2. Coat mahi mahi with the pesto and place a sun dried tomato on top.

  3. Chop pineapple and place on the pan with the mahi mahi.

  4. Bake for 20 minutes

  5. Prepare rice.

  6. Shred zucchini.

  7. Saute zucchini for 3 minutes and then add your rice. (add more pesto here if you're feeling it)

  8. Pan fry green beans with lemon. Add lemon juice, garlic salt, and pepper at the end!

  9. Serve and enjoy!
