My Grandma's Indian 1 Pot Rice

Serves 4

Ingredients

  • 1/2 tsp cumin seeds

  • 2 tbsp olive oil

  • 1/2 white onion

  • 2 cloves of garlic

  • 1/2 chicken breast

  • 1/2 tsp turmeric

  • 1 tbsp garam masala

  • 1 tsp salt

  • 1 cup cooked rice

  • 3.5 cups water

  • Lemon

  • Coriander

Process

  1. Chop onion, garlic, mushrooms, chicken.

  2. Pour olive oil, cumin seeds, cinnamon, onion, and garlic into the pot. After 3 minutes, add in chopped chicken. Sprinkle in turmeric, garam masala, red chili, and mushroom.

  3. Add in cooked brown rice and water.

  4. Let simmer on medium heat for 25 minutes.

  5. Squeeze lemon, and sprinkle fresh coriander and chili flakes to serve.
