Kale and Grilled Peach Salad with Balsamic Chicken

O-KALE listen up! This bowl is not only delicious, but has fall vibes, is healthy, and is quick. Like it literally takes 10 minutes to make!!! And it has EBTB, goat cheese, and glaze which is 👌🏻👩🏻‍🍳

** serves 2 **


  • 2 chicken breasts

  • Olive oil

  • 2 cloves of garlic

  • 2 tbsp balsamic

  • 1 peach

  • Kale

  • Broccoli Slaw

  • 1/2 red onion

  • 1/2 english cucumber

  • 1 avocado

  • EBTB for seasoning

  • Balsamic glaze to top


  1. On medium-high heat, put 2 chicken breasts on an oiled pan. Add 2 cloves of minced garlic, another drizzle of olive oil, and the balsamic vinegar. Cook thoroughly (around 6 -8 minutes).

  2. Cut the peach into thin slices. Add it to the pan with chicken breast and let it cook for 2-3 minutes.

  3. Dice the red onion and cucumber. Slice the avocado.

  4. Build the bowl! Add as much kale as you want (I did around 1 cup and sliced it to be thinner). Add another half cup or so of broccoli slaw. Add in the onion, cucumber, and avocado.

  5. Once the chicken and peaches are done, add them into the bowl. Top with EBTB and balsamic glaze. Enjoy!
