Ground Turkey Boats

There’s something so satisfying about using food as a container for more food 😋

**serves 4***


  • 4 bell peppers

  • 1/2 white onion

  • 1 lb ground turkey

  • 1 tbsp olive oil

  • 2 Roma tomatoes

  • 2 tbsp garlic powder

  • 1 tbsp cumin

  • 1 tbsp paprika

  • 1/4 cup Trader Joe's enchilada sauce

  • Sour cream to serve

  • Mexican style shredded cheese blend to serve

  • Green onion to serve


  1. Preheat the oven to 350ºF.

  2. Cut the top off each bell pepper, and rinse out the seeds from inside. Wrap each bell pepper in aluminum foil. Put on a cookie sheet, in the oven for 20 minutes.

  3. Meanwhile, oil a large skillet over medium-high heat. Dice the tomatoes and white onion, and add it into the skillet. Saute for 2 minutes. Add in the ground turkey, garlic powder, cumin, paprika, and enchilada sauce. Do NOT cook all the way through-- just mostly done.

  4. Scoop the ground turkey mixture into the bell peppers. Cover back up and put in the oven for another 10 minutes.

  5. Serve with sour cream, green onions, and Mexican style shredded cheese!
