The garlic achaar at Trader Joe’s is one of my favorite flavors to add to a dish. Here I added it to eggplants and chickpeas for a great veggie entree! And it’s all in 1 pan.

Cook time: 20 minutes
Total Time: 25 minutes
Ingredients
0.5 eggplant, cubed
1 white onion, diced
1 can garbanzo beans
Dollop Greek yogurt
3 Tbsp garlic achaar
parsley, to serve
Process
In an oiled pan over medium high heat, add your eggplant and cook for 5 minutes. Add onions and cook for around 5 minutes or until translucent.
Pour the chickpeas into the pot, add a dollop of Greek yogurt and the garlic achaar sauce. Add the lid and cook for 15 minutes on low heat.
Serve over rice. Optional to add parsley too on top for some color
