Quick & Easy Spinach Artichoke Dip

This recipe is a simple, high-protein, healthy version of the classic spinach artichoke dip! The secret ingredient is cottage cheese - it's creamy but healthy and nobody will be able to notice the difference. And because it's so quick to make, you can whip this out real quick if you have guests coming over.

Ingredients for your follicular phase: artichoke. During the follicular phase, your metabolism naturally slows down, so you want to eat foods that aid liver detoxification to ensure estrogen buildup doesn't occur in the gut.

Artichoke is high in fiber, folate, and vitamin C. Fiber is key to helping our body flush out excess estrogen while our body ramps up production at this time of the cycle. Vitamin C and folate strengthen the release of the egg and the chances of implantation in the ovulation phase.


Quick & Easy Spinach Artichoke Dip

  • 1/2 cup marinated artichoke hearts, drained

  • 2 handfuls spinach

  • 1/3 cup cottage cheese

  • 2 tbsp feta

  • 1 tsp garlic powder

  • 1/2 tsp salt


1. Heat a skillet over medium-high heat. Once hot, add a drizzle of olive oil, the artichoke hearts, and spinach. Cook the vegetables for 3-4 minutes then remove from heat.

2. Place all ingredients in a food processor and pulse until combined, but not completely smooth.
