Gorgonzola Scalloped Potatoes

Cheesy potatoes are amazing as is- but adding Gorgonzola is a game-changer. This recipe is inspired by the Gorgonzola crackers that Trader Joe's stopped carrying. I miss them dearly. But until I am reunited with my favorite crackers, this recipe will satisfy my Gorgonzola cravings. Enjoy!

Cook/bake time: 60 minutes

Total Time: 1 hour 10 minutes


  • 2 tbsp olive oil

  • 1/2 cup white onion, chopped

  • 1 tbsp minced garlic

  • 21/2 tbsp flour

  • 2 1/2 cup whole milk

  • 1/4 cup mozzarella (we used mozzarella string cheese)

  • 3/4 cup gorgonzola

  • 1/4 cup pecorino

  • 2 tsp salt

  • 1/4 tsp ground black pepper

  • 3 lbs potatoes, peeled and sliced


  1. Preheat oven to 375º

  2. Use a food processor to thinly slice, or scallop, your potatoes.

  3. In a large pan over medium-high heat, heat up your olive oil. Add diced white onion and saute for 5 minutes. Add in minced garlic, milk, salt, pepper, gorgonzola, mozzarella, and pecorino. Stir over medium heat until uniform.

  4. Layer the potatoes inside an oiled 13 x 9 pan. Pour the cheesy mixture on top of the potatoes and use a spatula to mix it in. Grate some more pecorino on top to taste.

  5. Bake for 30-40 minutes, or until browned.

  6. Let it cool for 10 minutes before serving. Enjoy!
