Grandma Judy's Chocolate Chunk Pumpkin Bread

I’m PUMPEDkin to be sharing this recipe with you all! My grandma is the one who gave me this recipe (but of course, hers tasted even better than mine does because it was made with extra love). If y’all are looking for a fun fall treat, here ya go!

This is my grandmas pumpkin bread recipe. She loved to share it and so do I :) Also, I transcribed the recipe below the picture because it is a bit blurry.



Ingredients

  • 4 eggs

  • 3 cup sugar

  • 1 cup oil

  • 2 cup canned pumpkin

  • 3 cup flour (sifted)

  • 2 tsp baking soda

  • 2 tsp salt

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • 3/4 tsp nutmeg

  • 3/4 tsp allspice

  • 1/2 tsp ginger

  • 3/4 cup water

  • 1/2 chopped walnuts (we used pecans)

  • 6 oz chocolate chips (we chopped up dark chocolate)

Process

  1. Combine eggs, sugar, and oil in a mixer bowl. Mix on high for 5 minutes.

  2. Turn down the speed to medium and slowly add the pumpkin.

  3. Sift the flour and then add the rest of the dry ingredients to the sifted flour. Alternate adding the dry ingredient mix and water into the mixing bowl. Do not overbeat!

  4. Fold in your nuts and chocolate.

  5. Pour into 2 greased loaf pans and bake at 350 for 1.5 hours

  6. Serve with butter and enjoy :)
