I love seasonal drinks, desserts, pastries, meals, you name it. So as you can imagine, when Starbucks releases their holiday drinks, I am there! My favorite drink might be the caramel brulée latte, and I got to thinking... this would make a great cookie!
So I made up a recipe based while sipping on the latte. The base of the cookie is inspired by the sugar cookie, but it's spruced up with caramel chips and instant coffee - and then a cream cheese frosting, torched with granulated sugar. This is SO good

Ingredients
For the Cookie Dough:
2 cups flour
1 tsp baking soda
½ teaspoon baking powder
1 cup butter, softened
½ cup white sugar
¼ cup brown sugar
1 egg
1 teaspoon vanilla extract
1 ½ Tbsp instant coffee
½ cup Caramel chips (measure with your heart)
For the Brulée Frosting:
4 oz cream cheese, softened
1 cup powdered sugar
1 tsp pure vanilla extract
¼ cup granulated sugar (add last)
Process
Preheat the oven to 375ºF
Stir flour, instant coffee, baking soda, and baking powder together in a small bowl.
Beat sugar and butter together in a large bowl with a mixer until combined. Add in egg and vanilla and mix. Slowly blend in the dry ingredients. Once the dough is ready, add in caramel chips.
Roll dough into small balls and place on the baking sheet. Bake for 8-10 min
Make the frosting by beating the cream cheese until it’s smooth. Add powdered sugar and vanilla and mix until combined.
Spread about half a tablespoon of frosting on each cookie. Before serving sprinkle granulated sugar on top and use a kitchen torch to brulée the sugar!
