Caramel Brulée Latte Cookie

I love seasonal drinks, desserts, pastries, meals, you name it. So as you can imagine, when Starbucks releases their holiday drinks, I am there! My favorite drink might be the caramel brulée latte, and I got to thinking... this would make a great cookie!
So I made up a recipe based while sipping on the latte. The base of the cookie is inspired by the sugar cookie, but it's spruced up with caramel chips and instant coffee - and then a cream cheese frosting, torched with granulated sugar. This is SO good

Ingredients
For the Cookie Dough:
- 2 cups flour 
- 1 tsp baking soda 
- ½ teaspoon baking powder 
- 1 cup butter, softened 
- ½ cup white sugar 
- ¼ cup brown sugar 
- 1 egg 
- 1 teaspoon vanilla extract 
- 1 ½ Tbsp instant coffee 
- ½ cup Caramel chips (measure with your heart) 
For the Brulée Frosting:
- 4 oz cream cheese, softened 
- 1 cup powdered sugar 
- 1 tsp pure vanilla extract 
- ¼ cup granulated sugar (add last) 
Process
- Preheat the oven to 375ºF 
- Stir flour, instant coffee, baking soda, and baking powder together in a small bowl. 
- Beat sugar and butter together in a large bowl with a mixer until combined. Add in egg and vanilla and mix. Slowly blend in the dry ingredients. Once the dough is ready, add in caramel chips. 
- Roll dough into small balls and place on the baking sheet. Bake for 8-10 min 
- Make the frosting by beating the cream cheese until it’s smooth. Add powdered sugar and vanilla and mix until combined. 
- Spread about half a tablespoon of frosting on each cookie. Before serving sprinkle granulated sugar on top and use a kitchen torch to brulée the sugar!
